being all granola

we love to have granola around all the time at our house. we eat it for breakfast, midnight snack, or anytime on top of yogurt. since Hubby is gluten free i’ve found that it’s most cost effective to make my own rather then buy the gluten free versions of the expensive stuff.

the little miss loves it too. she also loves helping me to make it and thankfully it’s super easy to make! today i thought i’d share the recipe with you!

basic granola recipe

ingredients:

  • 4-5 cups rolled oats
  • 1 cup of chopped nuts: almonds, pumpkin, walnuts, peacans…anything you like. 
  • extras: flax seeds and/or chia seeds
  • spices: depending on taste, 2 teaspoons- 1/2 a tablespoon of each ground ginger and cinnamon 
  • 1/4 cup maple syrup or honey
  • 1/4 cup canola or vegetable oil
  • 2 egg whites beaten
  • 1 cup craisins or other dried fruit

Mix the rolled oats with nuts, extras and spices. Add the maple syrup/honey and oil. Slowly fold in egg whites(this is the secret to crunchy clusters!). Spread on a large cookie sheet. Bake at 325 for 30 min turning every 10 min. Let cool- it needs to sit all day and maybe even over night to get nice and crunchy. The next day put it in a ziplock bag or container and mix in dried fruit. enjoy!

holiday nostalgia {a repost from 2009}

 {i am reposting a favorite post from my first year of blogging back in 2009! just thought i’d share my favorite holiday “cookie” recipe again! nowadays i make it with “fake” butter so that it is dairy free. perfect for Husbuddy! anyway, enjoy the old school photos…hee hee… } 

Mom’s famous Peppermint Patties

i’m homesick! what can i say?! every year around this time it’s the hardest. so what did i go and do?

well, my friend Elizabeth did it this weekend too, so don’t put all the blame on me… i made my mom’s candy!

it was my favorite as a little girl. i loved to help her make it. she grew up on a farm and i’d always pretend that we were back on the farm together and how romantic that would be… sigh. 🙂 she’d let me roll the balls and put the fork in them… needless to say i’d make them as big as possible because they are just that yummy! now i know better, more lady like, or something like that… they’re very rich so they don’t have to be very big at all!  so to compromise the little girl in me, i make some big and some small… 🙂

recipe for my mom’s famous peppermint candy:

all the ingredients you need!

  •  1/3 c. corn syrup.
  •  1/4 c. butter, softened.
  •  1 tsp. peppermint extract
  •  1/2 tsp. salt.
  •  1 lb. sifted powder sugar(about 4-3/4c),
  • red and green food coloring.

mmm. i could sniff this stuff all day…

combine corn syrup, butter, peppermint, salt.

 

improvised sifting… give me a break! i don’t have a sifter… poor college student, remember?

slowly add sugar- keep mixing, use hands at the end so it becomes dough like.

slowly adding sugar… yum!

getting dirty!

divide into thirds, mix a couple of drops of red and green to a part and leave one white.

hey! christmas colors! or italy’s flag…

make small balls and flatten with a fork.

smells like christmas to me!

and i feel like a little girl again!

let cool and dry for several hours!

mmmm. i feel better. i still miss my family back in colorado and i don’t know when i’ll see them because we’re going to Seattle to see my in-laws this year. maybe i’ll have to make some more of these when we get there… 🙂

and maybe i’ll need to make another batch so {husbuddy} can eat some when he gets home… 😉 hee hee.

lemon-poppyseed muffins {recipe}

2013-06-08 19.26.16 so, around here, we are really excited when we find a gluten-free and dairy free recipe that doesn’t taste like it’s lacking delicious gluten or yummy dairy… so YAY for these muffins!

this recipe was adjusted from Lemonademakinmana’s blog because she doesn’t need the dairy free.  her pictures are prettier, so feel free to go get the recipe from her website 🙂

dry ingredients:

  • 1 cup brown rice flour *
  • 1 1/2 cup white rice flour *
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • 1 tsp xanthum gum

wet ingredients:

  • 1 cup almond milk *
  • 1 tsp pure vanilla extract *
  • 1 tsp pure lemon extract *
  • juice of one  lemon
  • 1 cup vegetable oil 
  • 2 cups sugar
  • 4 eggs 
  • zest of one lemon
  • 2 tbsp poppy seeds 
  1. Combine all of the above dry ingredients in a small bowl and set aside
  2. Beat the milk, extracts, lemon juice and oil in a mixer for 1 minute.
  3. Beat the sugar, eggs, zest and poppy seeds into wet ingredients until combined.
  4. Add the dry ingredients into the wet ingredients and mix until combined.
  5. Spoon into baking cups, about 3/4 full.
  6. Bake at 350 for about 20 minutes {i was careful not to brown the tops too much!}

*{adjusted from orignal recipe} i adjusted the flour because i’ve never found thai flour that she used and i like mixing brown and rice flours to get a more consistent texture. i adjusted the extracts to help with the dairy free milk and because i love putting extra extract into everything… is that wrong? ha.

to make the cute little banners, i just took these sticky notes that were a gift from Anthropologie {seriously, who doesn’t love this store?} but it looks like they are no longer in stock. Garden Basket Sticky Flags by Girl of All Work

i just taped them together with a toothpick= instant cute-ness! 🙂 because seriously, who can resist muffins with a little cuteness on top?

there ya go, a delicious gf/df recipe that doesn’t taste like it’s gluten free OR dairy free! 🙂

a saturday afternoon

even though we’ve gone glutten free, i can assure you, we haven’t gone cookie free.

heaven forbid, Husbuddy could never give up his cookies… he really should be called the cookie monster. he spent the afternoon making his {new} favorite cookies and then cleaned the kitchen. so wonderful! thank you dear. 🙂
